Sombrero Pasta Salad

Makes 6 servings
Ready in 20 minutes


1 (16 oz.) rotini noodles
1 (15 oz.) can black beans, rinsed and drained
2 cups corn, fresh or frozen
1/2 cup cilantro, finely chopped
2 tomatoes, diced
1 1/2 cups salsa, fresh or in a jar
1/2 cup olive oil
1/4 cup lime juice
2 Tbsp. Little’s Cuisine Original Taco Seasoning Mix
2 cups cheddar cheese, shredded
2 avocados, diced


1. Cook pasta according to package directions. Drain and cool.
2. In a large bowl, add the cooked pasta, black beans, corn, cilantro, tomatoes, and salsa. Combine
gently and set aside.
3. Meanwhile in a small bowl, quickly whisk together the olive oil, lime juice and Taco Seasoning Mix.
Pour over the pasta and toss to coat. Cover and refrigerate until serving.
4. Right before serving, add shredded cheese and avocado. Serve with corn or tortilla chips.
