3 lbs. small red potatoes
1/4 cup olive oil
1 Tbsp. Thai Stir-Fry Seasoning Blend
2 Tbsp. parsley, chopped
1. Preheat the oven to 400F with the sheet pan.
2. Cut the potatoes in quarters and place in a bowl with the olive oil, Thai Stir-Fry Seasoning Blend and toss until coated.
3. Transfer the potatoes to the hot sheet pan. Roast in the oven for 45 minutes or until browned and crispy. Flip with a spatula halfway through to cook evenly.
4. Remove the potatoes from the oven and garnish with parsley.
