Fresh and Spicy Gazpacho

Makes 4 – 6 servings
Ready in 20 minutes


4 cups (32 oz.) tomato juice
1 package Little’s Cuisine Blood Mary Seasoning Mix
2 cans (28 oz.) whole tomatoes in juice
2 celery stalks, diced
1 cucumber, seeded, diced
1/2 cup red bell pepper, diced
1/2 cup red onion, diced
1 garlic clove, minced
1 lime juice, juiced
Celery stalks, garnish


1. In a large mixing bowl, gently stir tomato juice and Bloody Mary Seasoning Mix.
2. Combine remaining ingredients and stir OR transfer to a blender and puree in batches for 15 seconds
on high speed. Cover and refrigerate for at least one hour.  
3. Serve chilled in bowls or cups. Garnish with celery sticks and your favorite toppings.
